The three Milwaukee natives Tom Dufek, Billy DuPlanty and Kyle Gregorash opend the Younglood Beer Co.  on June 12, 2020, located by the Capitol Square in Madison Wisconsin, on King Street, occupying the former site of Ancora. The coffee shop itself made a short journey across the street.

Kyle Gregorash, co-founder and head brewer, embarked on his brewing journey during his formative years in Port Washington. It was there that his father introduced him to the art of home brewing, igniting a lifelong passion. Gregorash’s affinity for crafting beer blossomed in the eighth grade when he created his first recipe. Drawing inspiration from Leinenkugel’s Honey Weiss, he carefully crafted a double-fermented honey weiss, showcasing his early talent and creativity.

After completing college, Gregorash ventured into the brewing industry, starting his professional career as a brewer in Whitefish, Montana. His expertise and dedication eventually led him to Door County Brewing Co., where he played a pivotal role in the establishment of Hacienda Beer Co. It was during this time that fate intervened, and Gregorash crossed paths with the other visionary minds behind Young Blood Brewing – Tom Dufek and Billy DuPlanty. Together, they would embark on an extraordinary journey, channeling their collective passion and expertise into the foundation of Young Blood Brewing.

Co-owner Tom Dufek, a former bartender at Merchant and Lucille, is also one of the founders of Plain Spoke Cocktail Co. This company has gained recognition for their commitment to producing canned cocktails that they describe as more authentic. They prioritize the use of high-quality, locally sourced ingredients and operates a production facility in Sun Prairie.

In the quest for a tasting room for Plain Spoke and opening Young Blood Beer, Tom ultimately decided that a dual-level brewpub and cocktail tasting room would be ideal for Young Blood Beer and Plain Spoke. .Young Blood would open with a 10-barrel brewpub located in the basement that could be viewed from above in the Young Blood taproom on the street level and on the second story of the building, there will be a dedicated tasting room exclusively for Plain Spoke Cocktail Co. This two-level setup allows both companies to showcase their unique offerings in a shared space.

Charles Barrows was the visionary behind the captivating interior of Young Blood. Enveloped in a warm ambiance, the space boasts elegant limestone walls that exude an air of refined charm. Suspended overhead, an expansive hanging trellis adds a touch of grandeur to the setting, casting intricate shadows that dance with the natural light.

Adding to the allure, a mesmerizing mural created by the talented local artist Dylan Waddell graces the expanse of one wall. This floor-to-ceiling masterpiece draws inspiration from the vibrant and enchanting “ruin bars” found in trendy Eastern European locales. Celebrating the rich tapestry of local art, craft, and bohemian nightlife culture, the mural invites patrons to immerse themselves in a world of creativity and expression. Its vivid colors and intricate details weave a captivating narrative, inviting guests to explore and discover their own artistic journey within Young Blood’s walls.

The Ancora Coffee shop underwent a remarkable transformation, bearing little resemblance to its former self. The entire space was completely revamped, and now exuding the essence of an immersive ‘Discovery Center‘ designed specifically for beer enthusiasts. Upon entering the bar, patrons are immediately captivated by a mesmerizing aerial view of basement fermentation tanks. The taproom, with ample seating for 60 to 70 individuals, offers a truly interactive experience that is unparalleled. The menu showcases a delightful array of globally inspired street food, skillfully crafted in a kitchen that caters to both the taproom and the Plain Spoke tasting room. To enhance the ambiance and evoke a sense of relaxation and escape, the Young Blood’s logo was thoughtfully created, featuring a palm tree designed to embrace an oasis-like quality, that the taproom encompasses in a tranquil and inviting atmosphere.

Young Blood has witnessed numerous opportunities during its initial two years, paving the way for remarkable growth and expansion. The acquisition of a production brewery located on the Southeast Side marked a significant milestone for the company, as it commenced brewing operations in November 2021. Additionally, Young Blood further bolstered its capabilities by procuring four new tanks in early 2022, thereby increasing its potential production capacity to an impressive 7,000 barrels within its existing space. Building on this momentum, the company ventured into new territory by inaugurating a taproom in the vibrant market-style Northside development situated in the East Side’s Eken Park neighborhood in November 2022. These strategic moves have positioned Young Blood for continued success and strengthened its presence in the industry.

Youngblood Beer Co. has also recently created another line of beers operating under the name of Saturday Brewing Co. and produces a small line of beers.

Saturday, a national holiday that comes once every week. Saturdays are for the people that want a lounge tour of America. So grab your roller skates and let’s boogie, because a Saturday is a terrible thing to waste.

Hazy IPA double dry hopped with Lemondrop, Strata and Sabro.  
Our musical tastes vary widely amongst the crew here. Some like the soothing sounds of Louisiana’s sludge metal heroes, Acid Bath. Others prefer to knock their work out to the lush sounds of the likes of yacht rock pioneers Doobie Brothers and Hall & Oats. Different strokes for different folks. This IPA Is hazy and juice as all get out as we dry hop it with a combination of lemondrop, strata and sabro leading to notes of coconut cream pie on the beach, lemonade in hand and a strawberry popsicle for good measure.

Werewolves Not Swear Wolves

IPA – Imperial / Double New England / Hazy

Double IPA double dry hopped with Eureka, Enigma and Cashmere.  2014’s mockumentary What We Do in the Shadows follows three vampires living together in a flat in New Zealand. A small sub-character group of werewolves also appear and are led by Rhys Darby’s character Anton and despite being werewolves, is quick to remind his crew to mind their manners and leave the colorful language to the vampires. This foggy double IPA is chock full of notes of boxed white wine Saturday nights, no ice cube needed while giving way to the tannic notes of citrus peel before exploding into the herbaceous candied notes present in Cashmere.

I Like My Water Crunchy

Imperial Rye India Pale Ale dry hopped with Eureka.  This beer is dedicated to the ardent souls who chew on their ice. Thick body, dank vibes. Get it. We dry hopped this Eureka for its tropical citrus and notes of lazy mornings in the northwoods.

Tropical Sour with Dragonfruit, Tangerine and Guava.  They sing a fine collection of songs like Proud Harry, Bad Sun Sinking and Born on the Peninsula. This tropical inspired sour hits hard with those island vibes from the combination of Dragon Fruit which imparts flavors of kiwi and pear as it pairs with the berry, floral notes of pink guava.

Double IPA double dry hopped with Lotus, Citra and MI Chinook.  Not all timeshares are in tropical locations. Sometimes they are in West Allis, WI. Often overlooked and much maligned neighbor to Milwaukee. But ‘Stallis was the home of the Packers at one point, hosting the NFL Championship in 1939 and of course, to this day is the site of the Wisconsin State Fair. We brewed this one for you West-allica. Citra’s delightfully dank and drippy citrus vibes combine with Lotus’ candied white wine and vanilla notes. Chinook pulls through at the end for tons of resinous notes of freshly rolled joints.

Ambrosia Salad inspired sour with Cherry, Pineapple, Mandarin Orange, Marshmallow and Coconut.  We did not know this was a thing. In house music industry veteran and company beverage manager, Beaver Bertram, keeps us up to date with all the happenings. “Regional Bluegrass Supergroup” was recently used to let everyone know what to expect of a show happening at our friends and neighbors, The Majestic Theatre. Show us the way you Beavarino. Ambrosia salad (which this brew is inspired by) is a Gregorash family favorite, passed down through generations. Legend has it that grandma G would throw rum in with the Cool Whip. Which explains why 15 year old Kyle got into a horseshoe throwing contest after eating six helpings. Kyle hates horseshoes

Belgian style strong ale cold steeped in Golden Raisins.  The Belgian strong ale is a practice in subterfuge. Rich and maroon in appearance. Fruity esters abound with honey on the nose and a medium level of carbonation, its looks can be deceiving. There is a caramel like sweetness present with notes of fig, tobacco and dried cherry. This fine little bevie packs a punch clocking in at 9% ABV. We cold steep this one on raisins to further accentuate the dried fruit characteristics.

Boooo Ben Konop

Sour ale with Red Prickly Pear, Raspberry and Sherbert.  In 2009, Ben Konop ran unsuccessfully for mayor of Toledo, Ohio. During the campaign Maxwell Austin engaged in some of the greatest and laziest political heckling ever seen. The video, which can be found online, is worth the 3 minutes or so to watch. This sour is blood red in color from the addition of prickly pear and raspberries. Prickly pear, if you aren’t familiar, tastes like the fruitiest watermelon bubble gum you’ve ever had. Combined with the sweet tart like addition of raspberries and you’ve got a sunset in a can.

Pineapple Demogorgen In the Upside Down

Pastry Sour with Pineapple, Marshmallow, Graham Cracker and Vanilla.  Originally released as a tap-room only Black Friday release, we saw that new Stranger Things trailer a couple months back and knew we had to bring this beverage back. Featuring hundreds of pounds of tropical pineapple this brew is reminiscent of pineapple upside down cake and has the familiar scent of marshmallow lingering around the fire, graham crackers dunked in whole milk and subsequently spilled on the counter with hints of vanilla icing which seems to get everywhere. Make sure you keep your senses about you. Strange things happen in the upside down.

Fake Kyle Wins This Round

Up to this point, we’ve only had people named Kyle produce YB beer. Kyle one of our founders, brewmaster and eternal optimist. Also Kyle, former accomplished chef, turned cellar person and lovingly dubbed K2 or Fake Kyle. Granted we’ve only hired one person for the brewer so we do not expect this Kyle trend to continue but K2 wins this round as he got Real Kyle to brew a traditional German style Dunkelweiss. A lovely combination between dunkel and hefeweizen this style showcases a malty, chocolate character with slight bubblegum like esters.

Fruit Punch style Sour Ale with Mango, Passion Fruit, Orange and Guava.  Billy is the gregarious one of the group here but if you tell him that tavern cut pizza (square) is better than pie cut pizza (triangles) he might cut you to the bone with a pizza peel. Next up in our line of fruit punch inspired brews, we bring you Mango which will hopefully be less divisive than the cut of your pie. The tropical vibes abound in this delectable little bevie as mango takes center stage, working the crowd and mixing seamlessly with passion fruit, orange and guava.

Sour with Strawberry, Apple and Cinnamon..  With the bounty of fall harvest now past, we wanted to celebrate the best of summer and fall together. This luscious sour is loaded up with hundreds of pounds of strawberries and all of their notes of state fair pie. We then round it out by adding loads of apple to give off notes of cider on the weekends before college football Saturdays. A kiss of cinnamon rounds everything out with just a whisper of the knowledge that the sun is sinking lower and the days are getting shorter.

Cherry Pie Sour with Cherry, Graham Cracker and Vanilla.  Sometimes the best life advice comes from Will Ferrell movies. More cowbell. Winners get to do what they want. And of course, this gem from Marky Mark – I’m a Peacock. Let me fly. This cherry pie sour has copious amounts of sweet cherry with additions of graham cracker and vanilla to round out the pastry notes on this lucious sour.

Hazy IPA double dry hopped w/ Citra.   From conception, we always wanted to use our platform as a brewery to positively impact the lives of our friends, family and community. This particular project is personal for us, as Kyle lost a loved one to Brain Cancer. Uncle Dean Hirabayashi was a kind, generous, charismatic and fun loving guy. He was quick with a joke, a life long athlete, and always ready for an impromptu dance party. And so when the opportunity to join the S.M.A.S.H. for Stache project presented itself, we immediately expressed our intent to join the cause. This is a way to honor the legacy of a truly great man. This beer is for Uncle Dean and to all those out there battling Brain Cancer in their lives. Much love

Tropical style Sour ale with Plum and Cara Cara Orange.  Trivia fact that We Built This City by Starship was crowned worst song of all time by GQ in 2016. They’re wrong. This slick and catchy 80’s standby has a special place in our heart. So pour one out for Grace Slick and turn it up to eleven. This sour is loaded up with tons of plum and the beauty of Cara Cara oranges whose red fruit provides rich notes of blackberry and rose petal.

Fruit Punch style sour ale with Red Guava, Passion Fruit and Orange. Board shorts are ubiquitous with the suns out, gunz out crowd and they sure can run the gamut. Too holey, too holy, too teeny or too steamy. Inappropriately constructed board shorts aren’t a good look. We love us some guava here. We use all kinds of it around these parts. We love it so much, we wanted to make it the focus in a brew it was already in. If you’re a fan of our fruit punch inspired sours, you’ll know that passion fruit, orange and guava provide the back drop for all of the different variations to play upon. So we add twice the amount of guava we normally would and let this tropical hallmark shine.

Cold Double India Pale Ale dry hopped with MI Chinook, Azacca and Strata.  Smile as wide as the Nile and the king of positive thinking. He loves vape pens and Phish. Dan is our Madison based sales rep and also the official unofficial Motivational Hippie Robot of the YB crew. If you see him out and about, ask him about his favorite Phish track. We’ve been vibing on IPAs fermented slow and low so we’re making a Double IPA with our favorite Kolsch yeast that we ferment a little slower and at a little lower temperature. The result is a DIPA that is supremely drinkable but with tons of fruity, juicy notes from the dry hopping.

Painkiller Sour with Tangerine, Pineapple and Coconut.  Billboard states “in order to be charted, there’s some combination of sales, streams and Nielsen data.” We on the other hand have a simple metric to let you know if a song has what it takes. If the song contains Snap, Claps, or Tambourine, you’ve got yourself a hit. This Painkiller inspired sour has more hits than a hammer and more hooks than a tackle box. A melody of mouthwatering pineapple with the luscious backdrop of tangerine all balanced by a creamy coconut backbone, a combo of which is sure to get your knees jumping.
